Baked Perch With Potatoes

Ingredients:

Half a perch

4-5  Potatoes

1  Red onion

3 Garlic cloves

8-10 Cherry tomatoes

Half tine of black olives

Olive oil

Rosemary

Salt

Black pepper

Step 1. Preheat the oven to 180 C
Step 2. Peel the potatoes and cut them in any shapes you prefer
Step 3. Put some olive oil into baking tray and add the potatoes, onions, garlic and rosmary. Season to your taste.
Step 4. Put the tray in the oven for aprx. 15-min
Step 5. Slice the cherry tomatoes
Step 6. Take the potatoes out of the oven, put the perch on top, season with salt, pepper. Then add on top tomatoes, olives and rosemary.
      Step 7. Bake for another 20 min.
      Step 8. Buona appetito
      P.S. I would like to note this fish dish goes very well with white wine.

Passatelli

Passatelli it’s a typical dish for our region Pesaro e Urbino or north Marche. You can prepare the meat broth, following the classic recipe. Pasta for Passatelli are done from breadcrumbs, parmesan cheese, lemon zest, eggs and nutmeg. It’s a perfect winter dish.
Ingredients:
250 g breadcrumbs / pangrattato
100 g parmesan cheese / parmegiano
5 eggs / uova
zest of 1 lemon /1 lemone gratugiato
1 pinch of salt / pizzicato di sale
1 pinch of black pepper / pizzicato di pepe
1 tbsp white flour / farina
1 pinch of nutmeg /pizzico di noce muscato
Step 1. In a big bowl put the breadcrumbs, parmesan cheese, lemon zest, salt, pepper, nutmeg and flour.
Step 2. Make the hole in the middle and add the eggs.
Step 3. Mix all very well until you can form a ball.
Step 4. Now take the masher (like on the photo) and then, taking small pieces from pasta ball start to squeeze, cut passatelli with knife aprx. 6-7cm long.
Step 5. You can cook them straight away or freeze in the freezer.
Step 6. Enjoy and Buon Appetito!!

Fantastic Hybrids Between Muffins And Croissants

Before you start getting interested about this recipe I would like to warn you, It’s not the easiest one and it requires a loooong time to make it! But IT’S WELL WORTH IT! So, if you are still interested, go ahead!
Ingredients for 12 pieces :
400 g flour,
80 g sugar
150 g milk
1 egg
1 pack(7g) dried yeast
30ml warm water
20g vegetable oil
100-150g unsalted butter
step 1.   Take luke-warm water and the dissolve the yeast .
step 2.  Warm a milk (but make sure that milk is not hot) and mix in the egg, sugar and oil.
step 3.  Sift the flour
step 4.   Mix all ingriedients together and knead, knead, knead…..till dough stops sticking to your hands.
step 5.  Cover the dough with clearfilm and leave to rest for 1,5-2 hrs.
step 6.  Divide the dough onto 6 even parts
step 7.  Take one part and roll out the dough aprox 3-4 mm thin
step 8.  Spread the buter with a thin layer
step 9.   Roll on in roll
step 10. Take one roll and with cut it with a knife in half (like on the photo).
step 11.  And roll in the “rose” shape.
step 12  When all the craffins are done, cover them and leave for another 1,5 hrs
step 13   Preheat the oven to 200 C and bake your craffins for about 20 min
step 14. Enjoy these fantastic craffins
P.S For the filing you can choose any thing you like, i do my with sugar and sinnamon; sugar and pistachios… use your imagination!
