Passatelli

Passatelli it’s a typical dish for our region Pesaro e Urbino or north Marche. You can prepare the meat broth, following the classic recipe. Pasta for Passatelli are done from breadcrumbs, parmesan cheese, lemon zest, eggs and nutmeg. It’s a perfect winter dish.
Ingredients:
250 g breadcrumbs / pangrattato
100 g parmesan cheese / parmegiano
5 eggs / uova
zest of 1 lemon /1 lemone gratugiato
1 pinch of salt / pizzicato di sale
1 pinch of black pepper / pizzicato di pepe
1 tbsp white flour / farina
1 pinch of nutmeg /pizzico di noce muscato
Step 1. In a big bowl put the breadcrumbs, parmesan cheese, lemon zest, salt, pepper, nutmeg and flour.
Step 2. Make the hole in the middle and add the eggs.
Step 3. Mix all very well until you can form a ball.
Step 4. Now take the masher (like on the photo) and then, taking small pieces from pasta ball start to squeeze, cut passatelli with knife aprx. 6-7cm long.
Step 5. You can cook them straight away or freeze in the freezer.
