Angie’s Fish Burgers

Experiments,experiments and, more important, success. So, I’m happy to share with you my fish burger recipe.

Ingredients:

2 small garlic cloves

200 g shrimps

230 g fresh tuna stake

800 g perch

1 egg

2 tbs grana padano

3-4 tbs breadcrumbs

salt

pepper

Step 1. Chop finely garlic and parsley

Step 2. Mince the fish

step 3. Put all ingridients in a bowl and mix well together

Step 4. Put fish burger mixture in the frige for about 30 min

Step 5. Form the mixture into the burger shape

Step 6. Cook on the grill pan till they are ready

Step 7. Stuff the burgers with whatever you fancy. I used classic combination with pink sauce, red onions, fresh salad, tomatoes and gherkins.

Step 8. Buon Appetito

Baked Perch With Potatoes

Ingredients:

Half a perch

4-5  Potatoes

1  Red onion

3 Garlic cloves

8-10 Cherry tomatoes

Half tine of black olives

Olive oil

Rosemary

Salt

Black pepper

Step 1. Preheat the oven to 180 C
Step 2. Peel the potatoes and cut them in any shapes you prefer
Step 3. Put some olive oil into baking tray and add the potatoes, onions, garlic and rosmary. Season to your taste.
Step 4. Put the tray in the oven for aprx. 15-min
Step 5. Slice the cherry tomatoes
Step 6. Take the potatoes out of the oven, put the perch on top, season with salt, pepper. Then add on top tomatoes, olives and rosemary.
      Step 7. Bake for another 20 min.
      Step 8. Buona appetito
      P.S. I would like to note this fish dish goes very well with white wine.

Polpette. Italian Meatballs

You will need:

400g minced meat( pork and beef 50/50)
200g sausage mince
200g breadcrumbs
6 tbsp grated parmigiano cheese
2 eggs
2 tbsp extra virgin olive oil
2 garlic cloves
Parsley
Salt
Pepper
Half glass white vine
One red onion
One botle of passata
 
Let’s start
 
Step 1. Put all meat, bread crumbs, cheese and eggs in one bowl.
Step 2. Chop together garlic and parsley and add it to the meat.
Step 3. Use your hands and mix it all together till you can easy form the mass in to the balls.
Step 4. Don’t worry if you can’t do the balls yet, add more breadcrumbs if needed.
Step 5. Prepare the frying pan and add olive oil.
Step 6. Start making the meatballs using your hands.
Step 7. Put them all in the pan and start frying.
Step 8. Don’t forget to turn them over.
Step 9. ATTENTION!! NOW IT’S VERY IMPORTANT MOMENT IN ITALIAN COOKING!! YOU ADD WHITE WINE!! Half a glass in the meatballs and half in your glass! 🙂
Step 10. Chop the red onion and add to the meatballs.
Step 11. Leave it to fry together.
Step 12. Add more wine if needed in your glass. And in the meatballs.
Step 13. Poor the bottle of passata on top.
Step 14. cover with a lead and leave to cook slowly for about 30-40 min.
Step 15. Buon Appetito!
