What a perfect combination! On the 2th of April this year in Mondolfo, region Marche, there was organised “Spaghettata” a big town party where the spaghetti were prepared following the traditional recipe which is kept under the secret :))
Fantastic work was done and administration colaborated with the Omphalos,organising solidarity sport events. Everyone who wanted to take a part in these events could buy the tickets and money from the sold tickets went to help autistic children! I was impressed by the quantity of people who participated in this big idea. There were people of all ages,from diffrent backgrounds enjoying this fantastic day! I would like to say big thank to mayor Nicola Barbieri, Omphalos, Avis and technical sponsor Caraffa Sport for the huge work and organisation.

1 garlic clove
1 cup of passata
7-10 cherry tomatoes
Half glass of white wine
Step 1. Clean the mussels.
Step 2. Put chopped garlic,parsley and cherry tomatoes to the pan.
Step 3. Fry for 5-7 min, then add the mussels and white wine.cover with the lead.
Step 4. Season with some pepper
Step 5. When the mussels are opened put on top some passata. Let it cook another 5-7 min and it’s all ready to eat!!!

Experiments,experiments and, more important, success. So, I’m happy to share with you my fish burger recipe.
2 small garlic cloves
200 g shrimps
230 g fresh tuna stake
800 g perch
2 tbs grana padano
3-4 tbs breadcrumbs
Step 1. Chop finely garlic and parsley
Step 2. Mince the fish
step 3. Put all ingridients in a bowl and mix well together
Step 4. Put fish burger mixture in the frige for about 30 min
Step 5. Form the mixture into the burger shape
Step 6. Cook on the grill pan till they are ready
Step 7. Stuff the burgers with whatever you fancy. I used classic combination with pink sauce, red onions, fresh salad, tomatoes and gherkins.
Step 8. Buon Appetito
Step 1. Prepare bread crumbs ( recipe is in the previous post “Italian Breadcrumbs”)
Step 2. Clean your calamari.
Step 3. Fill your calamari with bread crumbs mixture, but don’t overfill,make sure they are soft. About 2-3 teaspoons for one, depends on the size of calamaris.
Step 4. Place on the tray with a little olive oil and bake in preheated 180 C oven for 10-15 min.

It’s classic recipe for a base of all kinds of Italian recipes. You can use them for fish,pasta,meat and vegetable dishes. Today I explain only this base recipe and next time I will show you to use it in practice!
Breadcrumbs (qunantity depends on what you cooking)
1,5 Garlic clove
Olive Oli, extra virgin
Step 1. Put the breadcrumbs in the bowl.
Step 2. Chop the parsley and garlic very fine,add to the bowl with breadcrumbs.
Step 3. Add salt,pepper and olive oil. Please note,that you have to add enough olive oil to combine the mixture,but not to much,that it soaks in it.
Step 4. Mix it all up,until it is slightly sticky, but still falls apart.Now, it is ready to use for your preferred dishes.
Half a perch
1 Red onion
3 Garlic cloves
8-10 Cherry tomatoes
Half tine of black olives
Step 7. Bake for another 20 min.
Step 8. Buona appetito
P.S. I would like to note this fish dish goes very well with white wine.
Passatelli it’s a typical dish for our region Pesaro e Urbino or north Marche. You can prepare the meat broth, following the classic recipe. Pasta for Passatelli are done from breadcrumbs, parmesan cheese, lemon zest, eggs and nutmeg. It’s a perfect winter dish.
Ingredients:250 g breadcrumbs / pangrattato100 g parmesan cheese / parmegiano5 eggs / uovazest of 1 lemon /1 lemone gratugiato1 pinch of salt / pizzicato di sale1 pinch of black pepper / pizzicato di pepe1 tbsp white flour / farina1 pinch of nutmeg /pizzico di noce muscato
