Mussels Alla Livornese. Cozze Alla Livornese.

Ingredients:

1kg mussels

1 garlic clove

Parsley

1 cup of passata

7-10 cherry tomatoes

Half glass of white wine

Black pepper

 

Step 1. Clean the mussels.

Step 2. Put chopped garlic,parsley and cherry tomatoes to the pan.

Step 3. Fry for 5-7 min, then add  the mussels and white wine.cover with the lead.

Step 4. Season with some pepper

Step 5. When the mussels are opened put on top some passata. Let it cook another 5-7 min and it’s all ready to eat!!!

Step 6. Buon Appetito!

Angie’s Fish Burgers

Experiments,experiments and, more important, success. So, I’m happy to share with you my fish burger recipe.

Ingredients:

2 small garlic cloves

200 g shrimps

230 g fresh tuna stake

800 g perch

1 egg

2 tbs grana padano

3-4 tbs breadcrumbs

salt

pepper

Step 1. Chop finely garlic and parsley

Step 2. Mince the fish

step 3. Put all ingridients in a bowl and mix well together

Step 4. Put fish burger mixture in the frige for about 30 min

Step 5. Form the mixture into the burger shape

Step 6. Cook on the grill pan till they are ready

Step 7. Stuff the burgers with whatever you fancy. I used classic combination with pink sauce, red onions, fresh salad, tomatoes and gherkins.

Step 8. Buon Appetito

Italian Breadcrumbs. Pane Grattugiato.

It’s classic recipe for a base of all kinds of Italian recipes. You can use them for fish,pasta,meat and vegetable dishes. Today I explain only this base recipe and next time I will show you to use it in practice!

Ingredints:

Breadcrumbs (qunantity depends on what you cooking)

1,5 Garlic clove

Parsley

Olive Oli, extra virgin

salt

Peppe

Step 1. Put the breadcrumbs in the bowl.

Step 2. Chop the parsley and garlic very fine,add to the bowl with breadcrumbs.

Step 3. Add salt,pepper and olive oil. Please note,that you have to add enough olive oil to combine the mixture,but not to much,that it soaks in it.

Step 4.  Mix it all up,until it is slightly sticky, but still falls apart.Now, it is ready to use for your preferred dishes.

 

Baked Perch With Potatoes

Ingredients:

Half a perch

4-5  Potatoes

1  Red onion

3 Garlic cloves

8-10 Cherry tomatoes

Half tine of black olives

Olive oil

Rosemary

Salt

Black pepper

Step 1. Preheat the oven to 180 C
Step 2. Peel the potatoes and cut them in any shapes you prefer
Step 3. Put some olive oil into baking tray and add the potatoes, onions, garlic and rosmary. Season to your taste.
Step 4. Put the tray in the oven for aprx. 15-min
Step 5. Slice the cherry tomatoes
Step 6. Take the potatoes out of the oven, put the perch on top, season with salt, pepper. Then add on top tomatoes, olives and rosemary.
      Step 7. Bake for another 20 min.
      Step 8. Buona appetito
      P.S. I would like to note this fish dish goes very well with white wine.
